My fellow military dependents, as well as service men and women, know that when we get hit with a three week pay period it (and lets be real here) sucks. That final week of making things stretch and waiting just one more day to hit the grocery store calls for some creativity in the kitchen. And those of you with littles? I feel your pain. Opening the kitchen cabinets, staring, and thinking “Okay, we have rice, some canned vegetables and…. Is that mushroom tortellini back there? I forgot we had that.”
These pay periods are inevitable, and after over two years of experiencing them myself, I’ve loaded my cabinet with shelf-stable and delicious go-tos. Food that is wholesome, delicious, husband-friendly and baby-friendly. For those of you who are in the same boat as I am and need ways to keep everyone’s tummy (and wallets) happy, let me introduce you to my secret weapons.
Harvest Creek Chicken in a Pouch flavors are loaded with big taste, are 90 calories or less and just downright delicious. They are extremely versatile and time saving. I use them as snacks on-the-go, and as meals. When I want a single-serve meal that is fresh and not microwaved in plastic, I reach for these pouches. When the baby is down for the night, and my husband is out training, I can create delicious and quick meals. There are foods I always have on hand in my kitchen and these are just some of the ways I use chicken pouches to keep everyone happy.
Buffalo Chicken Lettuce Wraps: This is a great one for packed lunches. All it takes are some lettuce leaves, a pack of Harvest Creek Buffalo Chicken, some shredded carrots, cucumbers and diced tomatoes. A blue cheese or ranch dip adds just a touch more pizazz to this low-carb meal. Not looking to cut carbs? Just swap the lettuce for soft tortillas or even two slices of bread.
Lemon Pepper Chicken Tacos: Another great packed lunch (sensing a trend here?) and again, so, so easy. I love lemon-pepper anything, and Harvest Creek did not hold back on the flavor here. Grab some tortillas, hard or soft, load it up with a Harvest Creek Lemon Pepper chicken pouch, and whatever you like on a taco. I tend to reach for avocado, and diced bell peppers and onions.
Chicken Salad Sandwiches: I know that everyone likes chicken salad their way, and grandma always makes it best, but we’re working with what we have and it is still going to be delicious. Harvest Creek Chicken Salad pouches offer a great base, and you can still add your own flare. Tear open a pouch and add what you like! For me, that would be a bit of pickle relish and diced purple onion. That’s it. Everything else is done for you already. Put it on some sandwich bread and you’ve got a fantastic, filling sandwich.
Walking Chicken Taco: This one might be my favorite because you only have to wash a single dish, and it's a fork! Simply tear open a Plain Harvest Creek Chicken Pouch, add shredded cheese, tortilla strips, salsa, hot sauce (if you like it spicy) and taco seasoning! Grab a fork, mix it well, and enjoy!
Harvest Creek Chicken pouches offer a strong base to any meal or snack, and with a little creativity you can make some phenomenal food. They truly are the ultimate secret weapon to have in your kitchen cabinets.
