With tender roasted butternut squash, sweet dried cranberries, crunchy pumpkin seeds, and premium white chicken, all tossed in a bed of fresh greens and balsamic vinaigrette, it’s a perfect blend of sweet, savory, and seasonal goodness.

1 Harvest Creek Premium White Chicken Pouch
1 cup roasted butternut squash cubes
¼ cup dried cranberries
2 tbsp pumpkin seeds
2 cups mixed greens (spinach, arugula, or baby kale)
2 tbsp balsamic vinaigrette

Roast the butternut squash in advance by tossing the cubes in olive oil, salt, and pepper, then baking at 400°F for 20-25 minutes. In a large bowl, toss the mixed greens with the roasted squash, dried cranberries, and pumpkin seeds. Scoop the Premium White Chicken from the pouch and place it on top of the salad.
